Breakfast DIY: baked egg, bacon, and cheese!

I’m not much for partaking in many traditional domestic things (cooking/baking, being one them). And although this blog has thus far been geared toward glass art and DIY projects, we’re shifting gears today.

Let’s start with a simple fact about me: I LOVE breakfast. Plain and simple. So this morning I found myself in dire need of some delicious breakfast food and was at a loss as to what to make. My favorite default meal consists of pancakes and sausage links, but that gets old after making/eating the same every Sunday. As my boyfriend is out of town I decided to make something new (I prefer to make experimental meals for myself, first).

Second fact about me: I LOVE Pinterest. I recalled an image of a breakfast treat I had a seen a few weeks ago, for which I had even gone as far as to purchase a large muffin tray. So I dug up the recipe I had seen and went for it. Although many varieties exist, I decided to go with simple ingredients: eggs, bacon, and cheese. Alright, I admit, that’s all we had in the fridge.

As stated above, I’m a simple girl so here are easy instructions for whipping this up yourself. Below are the materials I used and ingredients. It’s pretty easy to modify to suit your needs. Preheat oven to 375° F, prepare ingredients, and bake for 25-30 minutes.

Materials needed:

  •     1 large (6) muffin tin (I placed 2 eggs in each cup – if you have a small tin, toss in 1 egg)
  •     1 mixing bowl & whisk

Ingredients per single muffin cup (this way you can make however many egg bakes you need):

  •     2 eggs
  •     2 pieces of bacon
  •     small handful of (mozzarella) cheese (~ 1 tablespoon)
  •     salt and pepper

While oven is preheating, layer 2 pieces of bacon along the edges of each cup and fill the center with 2 lightly beaten eggs and a sprinkle of your choice of cheese.

Assembled and ready to bake!

Toss in oven for 25-30 minutes and voila!

Ready to eat!
